Mincemeat

 

The sweetness in this mincemeat is from the dried fruit and the fruit juice.  There is no added sugar.

 

225g/8oz raisins

225g/8oz sultanas

100g/3½oz ready-to-eat dried apricots, finely chopped

100g/3½oz glacé cherries, rinsed, dried and finely chopped

50g/1¾oz blanched almonds, cut into slivers

1 large carrot, peeled and finely grated

50g/1¾oz vegetable suet

1 lemon, finely grated rind and juice

1 large orange, finely grated rind and juice

2 tablespoons brandy

 

Place all the ingredients into a large bowl and mix well.  Cover and refrigerate for 24 hours.  Stirring occasionally.  Pack into clean and sterilised jars.  Store in the refrigerator for up to 2 weeks, or freeze in a tupperware container until required.

 

Makes approximately 2lb
