American Bran Muffins

250g/9oz

Oatbran

50g/1¾oz

Sultanas

1 tablespoon

Caster sugar

1 teaspoon

Ground cinnamon

1 tablespoon

Baking powder

Egg whites

350ml/12floz

Skimmed milk

 

Pre heat the oven to 220 C/425 F/Gas mark 7

Mix together the oatbran, sultanas, sugar cinnamon and baking powder.  In a separate bowl mix the remaining ingredients, pour over the bran mixture and mix well.  Set the mixture aside for 5 minutes then divide it between 12 muffin cases.  Bake in the oven for 12-15 minutes until golden and risen.

Not suitable for freezing. 

Serves 12.
